Caesar Dressing

Software:
- 1/2 garlic clove peeled and crushed
- 4 anchovy fillets drained and crushed
- 3 ounces Parmesan grated
- 1 heaping tbsp creme fraiche or yogurt
- juice of 1 lemon
- 3 times evoo to lemon juice
- salt and pepper to taste

1. Combine everything except evoo in food processor, blender or stick blender
2. With machine on, add evoo in steady stream
