- 4 pork chops
Program
1. Melt 2 tbsp fat in skillet over medium high heat
2. Season pork chops with salt and pepper or other spices as desired
3. Sear pork chops for one minute
4. Flip and sear on second side
5. Turn heat to medium and cook covered for about four minutes
6. Flip and cook for four more minutes until temp is 150
For white wine pan sauce
1. Remove all but one tbsp fat, adding more if necessary
2. Sauté 1/4 cup diced shallot for about one minute
3. Sauté minced garlic for 30 secs
4. Add 1/4 cup vermouth and deglaze
5. Add 1/2 cup chix stock and reduce
6. Off heat Add in 2-3 tbsp I salted butter until gone
7. Finish with a few drops of lemon juice
