- 3 cups chopped broccoli (fresh or frozen)
- 2 garlic cloves, crushed
- ½ cup oat flour (or whole wheat)
- 1 large egg
- 1/3 cup grated pecorino cheese (or parmesan)
- ¼ teaspoon red pepper flakes (optional)
- salt & pepper
- oil for frying
1. Cook broccoli til tender but not totally soft. You want it to retain some of its bite.
2. Cool broccoli then chop into small pieces 1/4 to 1/2 inch
3. Mix all ingredients in large bowl
4. Form into 3 inch patties
5. Fry in non stick pan with a little fat
6. Drain and season again
