This is the first time i'm doing this. We'll see how it goes. The recipe was a loose adaptation of something I saw on foodgawker.com
1 Roasting Chicken - about 5-6 lbs
6 slices bread, diced into 1/4-1/2 in cubes
1 Medium onion, diced
2 Medium ribs celery, diced
2 slices breakfast ham or bacon, small dice
4 onions, peeled and quartered
For stuffing
1. Bake in single layer bread cubes in 250 oven for about 45 minutes until almost as dry as croutons
2. Saute onions and celery with some salt and pepper until softened, set aside
3. Saute ham until warmed and slightly browned, combine with onion mixture
4. Heat 2 cups chicken broth
5. Combine bread into onion mixture, add one cup of broth
6. You want the bread most but not soggy (I figure it is going to absorb more liquid during cooking)
7. Add more broth if necessary
Assembly
8. Raise oven temp to 375
9. Clean chicken and remove any gizzards, rinse and pat dry
10. Put stuffing in cavity, but don't jam it in
11. Place chicken in dutch oven, cover, and place in oven for 1 hour
12. Toss onions with some oil, salt, and pepper
13. After 1 hour remove lid and add onions
14. Roast for about 30 mins more or until temp in thigh is 170 and breast is 160
