-2 lbs onions, halved and sliced medium
In a 12 inch nonstick, heat 2 Tbsp fat (either all oil or half oil and butter) on high heat.
Add onions and kosher salt.
Sauté for about 5 mins to soften and release moisture.
Turn heat to about medium and cook stirring frequently for about 40 more mins.
Add about 1 Tbsp water and store.
