Software:
- Two tilapia filets patted dry
- Olive oil
- Panko breadcrumbs
- Grated Parmesan
1. Combine 1/3 cup Panko and half that of grated Parmesan in shallow dish
2. In another dish lightly coat filets with olive oil
3. Season filets with salt and ground pepper and any other seasonings you choose
4. Press filets into crumb mixture, making sure to get a good coat of crumbs on both sides
5. Heat a few glugs of olive oil in a nonstick pan over medium high heat
6. Shake of excess crumbs and place filets in pan. Don't move for a couple minutes
7. Once you have a good crust an fish are cooked a good way through, flip and cook other side for less time
