Basic Beef Stew

Ingredients:
1. 3-4 lbs chuck roast cut into 1.5 in cubes
2. 2 medium onions coarsely chopped
3. 3 cloves garlic
4. 1/4 cup flour
5. cup red wine or bottle good beer
6. 3 cups chicken broth
7. bay leaf
8. dried thyme
9. veg (see note at bottom)

Program
1. Preheat oven to 300
2. Season beef with kosher salt and ground black pepper
3. Heat veg oil in dutch oven over medium-high heat
4. Sear meat in batches in oven
5. Remove meet and set in bowl
6. Add onion and saute til starts to soften
7. Reduce heat to medium and add garlic and saute about a min til fragrant
8. Stir in flour until cooked some (lightly colored)
9. Add wine/beer to pan and scrape up any browned bits
10. Add stock, bay leaves, and thyme and bring to simmer
11. Add meat and any accumulated juices and bring to simmer
12. Cover and place in oven for 1 hour - stir - taste and season - return to oven
13. Cook meat for an additional hour.
Note: If adding veg -
Potatoes should be added at the hour mark
Frozen cauliflower can be added with 30 mins left
Frozen peas add after removing from oven
