1/2 C vegetable oil
2 tsp vanilla
1 tbsp peppermint extract (optional)
4 oz unsweetened chocolate
4 eggs
2 C flour
2 tsp baking powder
1/2 tsp salt
1 C confectioners sugar
1. Mix sugar, oil, vanilla, peppermint, and chocolate
2. Mix in eggs one at a time
3. Mix dry good and add to wet woks
4. Cover an refrigerate for three hours
5. Preheat oven to 350
6. Drop tsp of dough, shape into balls, into powdered sugar and coat all over
7. Place two inches apart on greased cookie sheet
8. Bake 10-12 until almost no indentation remains when touched
