Notes: I didn't do the glaze or jam, but it worked out great. It stayed together real well on the grill. I tripled this recipe. I also used bits of a recipe for turkey burgers from cooks illustrated.
Ingredients:
2 lbs chicken breats
1 scallion
salt and pepper
1. Cut chicken into 2 inch pieces, place on a sheet and freeze for about 20 mins
2. Roughly chop the scallion
3. Combine chicken cubes and scallion in food processor fitted with blade, pulse to grind until the consistency of ground beef or however you like it
4. Season with salt and pepper
5. Form into patties at about 5 oz per patty, refrigerate
6. Take out just before grilling
7. Heat grill to high
8. Put on grill to sear, turn burners to medium or medium low
9. Cook for about 6-8 per side or until about 165 internal temp
