Chicken and Brown Rice Casserole

Serves: 8

Ingredients:
2 cups cooked brown rice
6 boneless skinless chicken breasts
3 tbsp butter
1/4 C flour
1.5 cups milk
Water
Frozen veg (broccoli)

Program:
1. Preheat oven to 350
2. Pat dry, cut up, and season chicken pieces with salt and pepper
3. In large sauté or Dutch oven brown chicken in batches
4. Place rice in bottoms of 13x9 Pyrex dish
5. Place chicken as you go snugly on top of the rice
6. Once all chicken in dish top with frozen veg also snugly
7. In pan used for chicken add the butter til foaming subsides
8. Add flour until it cooks some and is tan in color, scrape up the bits from the bottoms
9. Add the milk and whisk to blend it smooth, cook to thicken. If it gets too thick thin with more milk or some water. Season with salt and pepper. 
10. Pour sauce over mixture in dish
11. Cover with foil that you've sprayed and bake for about 45 minutes until chicken is cooked through to 165 degrees.
