The Best Roast Potatoes

Notes: these are the kids favorite way to have roast potatoes

Ingredients:
2.5 lbs Yukon or other low starch potato, sliced into have inch disks
5 tbsp olive oil
1 tsp table salt

Program:
0. Preheat oven to 450 with rack in lowest position and rimmed baking sheet on rack
1. Par cook potatoes in salted water until almost cooked through
2. Toss potatoes with 2 tsp oil and half tsp salt
3. Toss again with 2 tsp oil and half tsp salt, roughing them up so there is a nice starchy coating on them
4. Quickly take pan out and coat with last tsp oil
5. Place potatoes with a cut side down on pan
6. Cook for 15-25 mins rotating pan if your oven doesn't cook evenly
7. Carefully flip each piece with tongs and cook for another 10-20 mins
