Roasted Root Vegetables

Notes: I did only parsnips as i was trying this out on the kids. First attempt cooked faster than listed. It could be because i slided them a bit under an inch, but it was the outside that was too brown. maybe line with foil or tone down the temp.

Ingredients:
2 lbs parnips, cut 1 inch on the bias
5 ounces shallots or a small onion, onion cut if bigger than an inch

Program:
1. Preheat oven to 425 with a baking sheet in it
2. Toss veg with salt and pepper, cover and microwave 8-10 minutes, stirring halfway through
3. Drain off liquid
4. Toss with 3 tbsp oil
5. Spread evenly on baking sheet and return to oven
6. After 25 minutes stir things around. Roast for 15-25 minutes longer are golden brown
