Make Ahead Mashed Potatos

Great for holidays or if you plan a mashed potato bar.

Software
- 5 lbs russet
- 1 stick butter, melted
- salt
- 3 cups heavy cream

1. Poke the Potatoes with a fork and nuke them for 15 mins, turning halfway through
2. Finish them in a 450 oven for about a half hour
3. Scoop out the insides into a stand mixer with the paddle
4. Get the potato mixed
5. Add in up to two or so cups of the cream to get in the consistency you want
6. Mix in the melted butter and two teaspoons table salt
7. Fold in another half cup
8. Cover with plastic wrap
9. Refrigerate
10. Nuke for about 10 mins or until hot, mixing occasionally
