Alton Brownies

Notes: Awesome. I found using the whisk for everything made it too light and fluffy, almost like a souffle.

Serves: 16

Ingredients:
- 4 large eggs
- 1 cup sugar, sifted
- 1 cup brown sugar, sifted
- 2 sticks butter, melted
- 1.25 cups cocoa, sifted
- 2 tsp vanilla extract
- 1/2 cup flour, sifted
- 1/2 tsp kosher salt

Program
1. Preheat oven to 300. Prepare an 8 inch square pan.
2. Sift the ingredients using a food processor
3. In a mixer with the whisk beat the eggs until light and fluffy. Add both sugars.
4. Switch to the paddle attachment and combine the remaining ingredients.
5. Pour the batter into the prepared pan.
6. Bake for 45 mins, checking doneness with a toothpick.
7. Let cool before cutting into 16 squares.
