Source: Not Sure - a bit of a couple food gawker and cooks illustrated recipes
Notes: I adapted this and continue to refine. One of the favorite ways for the kids to eat potatoes that aren't deep fried.
Serves: 6
Ingredients:
- about 4-6 russet potatoes
- vegetable oil
- salt and pepper
Program
1. Preheat oven to 450 with rack in middle
2. Slice potatoes lengthwise and then into wedges. I typically get 12-16 wedges per potato.
3. In a large bowl toss the wedges with a vegetable oil. Then sprinkle with salt and pepper to coat.
4. Place the potatoes wedge up in a rimmed baking sheet. I found i can pack them in pretty tight.
5. Bake for 15-25 mins until they've started to brown in spots. You don't need to turn them or anything.
Yum!
